Puerto Rican food is a combination of African, Indian, Spanish, and Caribbean styles. Together, they allow for a new and refreshingly unique culinary taste. Seasonings often used include peppers, cinnamon, fresh ginger, cilantro, lime rind, a sour orange called naranja agria, and cloves. A commonly used sauce called Sofrito, which combines achito (annato seeds fried in lard and strained). Puerto Ricans cook many dishes in a caldero (cast-iron kettle with a rounded bottom)
